This is very common dish for breakfast in Vietnam. You can found it easily from the high-class restaurant to street-food courts but the taste is totally different.
The core to make this dish become popular and taste good is Ribs, sausage and fish sauce. And what inside are
- Grilled Ribs (sườn), I just put a little bit salt, bean sauce, soja sauce, fresh milk and very little honney to get enough burnt color
- Skin and thinly shredded pork (Bì) but here in Germany, I could not get pork skin, so I replace with cellophane noodle. So, I mix all together with powder from fried rice and chopped garlic.
- Sausage (chả) from chopped pork, salted egg and mushroom. Then mix them all and steam it.
Fish sauce just included garlic, chili, vinegar, sugar and fish sauce. Mix all together you have a mix sauce called nước mắm tỏi ớt.
